secretlyevil, I'm just gonna say....There is no better cheesecake than one that is done in a water bath. The texture can't be beat. You should master it. I had to endure at least one soggy one getting it right, but it's worth it. ALWAYS use a springform.

OMG. H and I went to one of our favorite restaurants for our anniversary a couple years ago, and they had a sweet potato gelato on the menu that week. Holy mother of god, it was so good. This restaurant is so amazing. I'm kind of glad and sad that it is 4 hours away from us. We were stuffed when we left.

Dammit all to hell, this is the year I finally get a spring foam pan and make cheese cake for realz isn't it? I'll make H get some ginger snaps this week or next. I'll sweeten the deal by telling him I'm going to practice by making a plain cheesecake. He'll be happy with that.

My family has been eating Paradise Pumpkin Pie for almost 40 years now. It was originally torn out of a Better Homes and Gardens magazine back in the day, but there seem to be a lot of versions floating around the interwebs now, so I don't know who really claims the original. I cut/pasted this from a Kraft page, and it's the same as "our" recipe. For the last 10-15 years, this has been my regular assignment at dinner. This year I'm thinking about shaking things up and using the same recipe, but cutting the crust into smaller circles and using ramekins or maybe a muffin tin to make little individual pie-ettes. I think I'll do some little mini-apple pies too because we have some newer extended family members who refuse anything pumpkin. Anyway, the original recipe is great. It's a layer of sweetened cream cheese, cheesecake-like, and a layer of spiced pumpkin on top. I definitely prefer it to a standard pumpkin pie which I just find to be a little too much pumpkin mush, especially if not cooked just quite right. Super easy to make.
1/2 pkg. (15 oz.) ready-to-use refrigerated pie crusts (1 crust) 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened 3/4 cup sugar, divided 1/2 tsp. vanilla 3 eggs, divided 1-1/4 cups canned pumpkin (NOT pumpkin pie mix - actual canned pumpkin) 1 cup evaporated milk 1 tsp. ground cinnamon 1/4 tsp. ground ginger 1/4 tsp. ground nutmeg 1/8 tsp. salt
PREHEAT oven to 350°F. Prepare pie crust as directed on pkg. for unfilled 1-crust pie, using 9-inch pie plate. (Or make your own, if preferred.)
BEAT cream cheese, 1/4 cup of the sugar and the vanilla with electric mixer on medium speed until well blended. Add 1 of the eggs; mix well. Pour into crust; set aside. Mix remaining 1/2 cup sugar, remaining 2 eggs, the pumpkin, milk, spices and salt; carefully pour over cream cheese mixture.
BAKE 1 hour and 5 min. or until center is set. Cool completely. Store in refrigerator. Serve with whipped cream.

Caramel Corn
2 cups packed dark brown sugar 1 cup butter 1/2 cup light corn syrup 1/2 tsp salt 1 tsp vanilla 1 tsp baking soda 7 1/2 quarts air popped popcorn (3/4 - 1 cup unpopped)
Directions:
1. Preheat oven to 200 degree. Pop corn and place in a large roasting pan.
2. Mix sugar, margarine, light corn syrup, and salt in a large (not medium) sauce pan. Melt and bring to a boil. Boil for 5 minutes, stirring occasionally.
3. Add vanilla and baking soda. Turn off heat. Stir fast as mixture will expand and get light in color. Pour over popped corn and stir to coat evenly.
4. Bake for one hour, stirring every 20 minutes. Remove from oven and transfer to wax paper to cool.
Peppermint Fudge
2/3 cup evaporated milk 1 2/3 cups granulated sugar 2 tbsp butter 1/2 tsp salt 2 cups miniature marshmallows 1.5 cups white chocolate chips 2 tsp mint extract (I used 1 tsp because 2 seems like a ton) red food coloring
Preparation:
1. Prepare an 8x8 pan by lining it with aluminum foil and spraying the foil with nonstick cooking spray.
2. In a medium saucepan over medium-high heat, combine the sugar, salt, evaporated milk, and butter and stir until the sugar melts.
3. Bring the mixture to a boil and boil, stirring constantly, for 5 minutes.
4. After 5 minutes, remove from the heat and stir in the marshmallows, white chocolate chips, and mint extract. Stir quickly and vigorously to incorporate all of the marshmallows and chocolate.
5. As soon as the candy is smooth, sprinkle drops of red food coloring over the top and stir once or twice, creating red swirls. Do not over stir, otherwise the candy will turn pink!
6. Immediately scrape the candy into the prepared pan. Allow to cool at room temperature or in the refrigerator until solid. Cut into 1-inch squares and eat as many as you can before making yourself ill, approximately 1/3 of a pan.
Per the request of ChillyMcFreeze, I give you a WW friendly apple crisp. I would assume that it is about worth 5-6 pts per serving. Enjoy!
Apple Crisp
Ingredients: 5 cups tart apples, peeled, cored and sliced (about 12 apples )-I use a mixture of granny smith, fuji and honeycrisp 2/3 cup sugar (I use baking sugar) 3 Tbsp Flour 1 tsp. cinnamon 1-1/ 2 cups brown sugar 1 cup butter, melted 1-3/4 cups flour 2 cups quick oats
Directions: Place sliced apples m a 13x9 glass baking dish. In a small bowl, mix together 2/3 cup sugar, 3 Tbsp. flour and cinnamon. Sprinkle over apples
In large bowl, mix together remaining ingredients until crumbly. Sprinkle over apples in baking dish. (Dish will be very full).
Bake at 350 degrees for 50-60 minutes or until apples are tender, mixture is bubbly, and topping is browned. Serve warm with ice cream
I haven't done a wine-brined one, but I have tried two other F&W turkey recipes and both have been awesome. In fact, I can't think of a single F&W recipe I've tried (which are lots!) that has been bad. I say go for it.
My cousin's wife makes the most awesome roasted brussel sprouts ever. It's sprouts, carrots and other root veggies and she just roasts them in the oven, but she must do something with butter or bacon fat or something because they're fucking incredible. Even my H, who HAAAAAAAAAAATES brussel sprouts, loves these things.
