baked steel cut oats are yummy and ridiculously easy. you could just do a crustless quiche style casserole and leave out the bread entirely. Add more veggies/meats. I like doing yeasty baked goods and just let them rise overnight in the fridge - but that starts to verge on not super easy depending on how friendly you are with yeast dough. (sticky buns, cinnamon buns, savory roll up type bun thingies, etc)
We had Thanksgiving on Saturday because my dad flew me and my girls out for a visit this week and H was going to be alone on actual Thanksgiving. I made crescent rolls from scratch for the first time using a Cook's Illustrated recipe.
I will never go back. Ever. Rolls from a can are a LIE.
It was also the first time I ever bought skim milk and probably the only reason I ever will buy skim milk again.

We're going to a friend's tomorrow for dinner. I'm bringing the mashed potato casserole I linked earlier and the cranberry sauce frog linked.
For an appetizer I am making shaved radish sandwiches (mainly as an excuse to stuff myself with them) because I know dinner will be late.
Her FI is a recently converted vegetarian and I had a hard time finding a brussels sprout recipe that didn't inolve bacon. I finally decided on this because it looked simple and tasty. I'll either make ahead or throw in a pan right before we eat.
Ok that Brussels sprout recipe looks amazing. My H loves . While I have all the ingredients in my house, and my H loves pimenton-spiced anything, I will not be making them tomorrow because, for the reasons I explained below, if I suggested lemon and pimenton on Thanksgiving, he'd have an aneurysm.
He won't even put lemons in the turkey brine.
But I am totally going to make this after Thanksgiving!!!

My family has been eating Paradise Pumpkin Pie for almost 40 years now. It was originally torn out of a Better Homes and Gardens magazine back in the day, but there seem to be a lot of versions floating around the interwebs now, so I don't know who really claims the original. I cut/pasted this from a Kraft page, and it's the same as "our" recipe. For the last 10-15 years, this has been my regular assignment at dinner. This year I'm thinking about shaking things up and using the same recipe, but cutting the crust into smaller circles and using ramekins or maybe a muffin tin to make little individual pie-ettes. I think I'll do some little mini-apple pies too because we have some newer extended family members who refuse anything pumpkin. Anyway, the original recipe is great. It's a layer of sweetened cream cheese, cheesecake-like, and a layer of spiced pumpkin on top. I definitely prefer it to a standard pumpkin pie which I just find to be a little too much pumpkin mush, especially if not cooked just quite right. Super easy to make.
1/2 pkg. (15 oz.) ready-to-use refrigerated pie crusts (1 crust) 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened 3/4 cup sugar, divided 1/2 tsp. vanilla 3 eggs, divided 1-1/4 cups canned pumpkin (NOT pumpkin pie mix - actual canned pumpkin) 1 cup evaporated milk 1 tsp. ground cinnamon 1/4 tsp. ground ginger 1/4 tsp. ground nutmeg 1/8 tsp. salt
PREHEAT oven to 350°F. Prepare pie crust as directed on pkg. for unfilled 1-crust pie, using 9-inch pie plate. (Or make your own, if preferred.)
BEAT cream cheese, 1/4 cup of the sugar and the vanilla with electric mixer on medium speed until well blended. Add 1 of the eggs; mix well. Pour into crust; set aside. Mix remaining 1/2 cup sugar, remaining 2 eggs, the pumpkin, milk, spices and salt; carefully pour over cream cheese mixture.
BAKE 1 hour and 5 min. or until center is set. Cool completely. Store in refrigerator. Serve with whipped cream.

I read online some people have problems with the cheesecake layer morphing into to pumpkin layer and ending up with a marbled-looking pie. Some say to freeze it after the cheesecake layer to 'set' it. Thoughts? Thank so much.
I've never had trouble with that. Sometimes as it is baking it will crack in the center and the cream cheese layer will be exposed when you pull it out, but then as it cools it goes back to looking normal. I've never had the layers actually mix. Even if they do a little, I don't think it's a big deal.

I made pumpkin pie (traditional) but also tried a Salted Pretzel Caramel Pie. I don't know if the caramel turned out quite right, but I have a feeling it'll still taste really fab, so I'll report back.

ESF the brussels sprouts were a huge hit. I will definitely make them again soon.
The mashed potato casserole was amazing! It was the only thing that was almost gone at the end of the night. It's way too decadent to make regularly but I will be bringing it to events whenever possible.

It's only for 8 people (and two are littles), so I'm trying not to go overboard. However I'm thinking of making lots of baked goods ahead of time so I have them for Christmas Morning.
My menu so far:
My Famous Scones (either cranberry orange or walnut-chocolate chip, depending on the muffin choice) Butterhorns with a brown butter glaze (natch. I may stuff half with almond paste because why not?) Braised Kale Fritatta (which I may throw some bacon in) Some sort of muffin (I can't decide between cranberry-orange, honey-oat, or millet with honey-butter)
SIL will probably bring her cheesey potato casserole. I need something for MIL to bring. Maybe a vegetable dish? Is there anything obviously missing that I can foist upon her?

This sounds delicious.I think you need either a vegetable dish or a fruit salad/sliced fruit kind of thing.

I'm in charge of apps. I think I'm going to make Ina Garten's roasted shrimp with green goddess dressing, candied bacon, caramelized onion dip with an asiago black pepper baguette, and probably some sort of truffle.

Can believe I forgot to report back! I loved it! So much better than regular pumpkin pie. I will definitely make it again.
I have to say, though, that I have NEVER gotten such split responses to a recipe before - ever. Half the people raved and loved it and wanted the recipe and the other half gave it a definitive thumbs down, saying they much prefer either a straight up pumpkin pie or a straight up cheesecake but not a combo of the two. To each his own!

Can I ask a question about baked mac and cheese? I don't really go by a recipe, but my friend is looking for one and asked me. So I went on the hunt for one that is closest to what I use, and WTF with the chopped onion??? Is this what people really put in mac and cheese?
