I have a drawer full of cloth diapers that haven't been used since DD was 5 months old. Her daycare doesn't do cloth diapers and it didn't make sense to create 1 dirty cloth diaper a day at home.
She'll be 2 next week and is probably at least 6 months from potty training. I started working part time (TODAY!) and am now home with her Friday-Monday. So over the course of 4 days, we could use plenty of cloth diapers.
So... What do I need to know about CD'ing a toddler?

Not really any different. Stuff plenty of inserts in if they're pockets (ds1 needs two large ones). You'll probably only need 5-6 a day. The poop is nice and ploppable and doesn't stain. I think CD toddlers is easier than babies

H would poop at the same time every day (unless he wasn't feeling well). I used a disposable for his BM and then cloth the rest of the day. We had to stop shortly after he turned 2 because I went back to work and his new school/daycare didn't allow cloth diapers. I was ready to be done with them.
I found it to be easier in most ways- fewer changes, easier poop disposal, they fit better.
The only negative, as mentioned here, is you need something that can hold a LOT of pee. I found fitteds to work best, but if you're working with what you have, just make sure you stuff some extra inserts in. Hemp is great for soaking up a lot and not adding bulk.
1. I have a bunch of Grovia and BumGenious diapers, but it sounds like they alone might not be absorbent enough? 2. She... doesn't poop in solid loafs. I'm not sure what's going on with her gut, but she's been on like a 4 month run of super runny poops. Grossness, right?
We used our prefolds-I hated pockets and never got into AIOs. I did have to switch detergent and add some Bac-out. Other than that, it was no different than CDing an infant.
I hate to take over your thread but can someone tell me if I have yeast or something in my diapers? DS2 generally only wears cloth at daycare but it seems like every other day he is getting a terrible rash so we have to switch back to disposables. I guess it could just be yucky toddler poo but if it is something else and I can treat the diapers, that would be great.
It probably is yeast, and even if it's not it doesn't hurt to treat them like it is. Just bleach the diapers or wash them in hot with vinegar and it should take care of it. Then you'll know!

1. We only use BG 4.0's during the day and they've been fine. If you want to put a bit more cash into it, buy a dozen red-edge GMD prefolds. They fit the BG's perfectly and contain toddler pee easily enough. We also do fitteds at night because there's a lot of pee at night (green edge Workhouse fitteds). Ditto everyone else on upping the amount of soap for washing. We also needed to start regularly stripping around 15 months.
