I’m about giving this a go. My two main obstacles are time and breakfast. Time meaning that my husband and I both work, and we have two very small children and opposite days off, this is huge challenge in terms of the amount of prep work involved with a lot of the recipes. Since he is at work on Sat/Sun, it’s impossible for me to find the time to prep/cook while taking care of the kids. Now, on the other hand, I work about 4 min from our house so I can do some dinner prepping during that time.
Breakfast needs to be fairly easy. I know most are big proponents of eating leftovers from dinner for breakfast, but I happen to ADORE actual breakfast food of all kinds, so this isn’t the most appealing option. Love the monkey salad recipe I saw in here though. I do like eggs, so that’s good.
I’m ultimately trying to lose about 30lbs. I’m signed up for my first half marathon in January so I run quite a bit. I plan to also start a new fitness program with more weights. It’s sort of a bootcamp/crossfit hybrid.
I’d like to hear how you all do the spaghetti squash dishes? I’m really loving the sound of sautéed veggies with beef and sauce over spaghetti squash. Not quite sure how you would cook that though!
Do your kids still nap! I have a two year old. I would meal plan and buy groceries on Saturday afternoon nap and then cook during Sunday afternoon nap. My H and I also work full time so I try to spend no more than 20 minutes of meal prep on week nights. Yesterday I roasted a whole chicken with potatoes and veggies an we will have that the next two nights.
I also cooked some sausage and cabbage for lunches this week.
I rely on the crockpot for roasts and soups which I prep the night before and then plug in in the morning.
The first week will be hardest but then you'll figure out time management stuff and your favorite easy meals so you won't have to spend so much time thinking about it.
I eat the same breakfast every day: 3 scrambled eggs, 4oz seasoned ground meat. I cook it at night and nuke in the morning. I usually leave the eggs a little rare so they aren't rubbery in the morning.
For spaghetti squash, you just cut in half long-ways and bake until it's tender.
