for my brother's family I want to do a family gift for them and their 5 kids (aged from 1 year to 8 years).
I was thinking something like a kit for a family movie night. What's a good movie for that range of kids though? I was thinking I could put microwave popcorn, hot chocolate mix, maybe warm socks in the kit. Any other ideas?

I did this for my cousin's family last year. I put in a Disney movie, popcorn, hot chocolate, crafts for Christmas Eve, a popcorn bowl and individual kid's bowls, kid's Jammies and slippers, and a bedtime story. They loved it!
The Sandlot? Monsters VS Aliens? Jiffy pop would be cool for the kids to watch and will add a little nostalgia for the parents. You could add candy, a blanket, popcorn containers (sometimes at the dollar store or target dollar section), you could make up a little trivia game about the movie you choose.
How about a blanket instead of socks? Or some movie candy? Or fun popcorn bowls? Movies that would work for those age ranges: Cloudy with a chance of meatballs Cars Elmo in grouch land Aladdin If they are religious, most of the veggie tales movies are good for a variety of ages

I have to mail it so it will have to be stuff I can easily send. They are very conservative Christian but will still watch movies as long as there's not bad language/messages in it.

Then I double my vote for Veggie Tales. Ballad of Little Joe, Jonah and the Whale, Veggie Tales Christmas, any of the Silly Songs with Larry sing-along ones. They're all pretty entertaining even if you aren't religious, but there is no bad language or bad behavior that doesn't have a positive "message" hidden along with it.
problem with Christmas movies is that they don't do Santa, lol.
Would A Charlie Brown Christmas be fitting since it actually touches on the commercialization of Christmas and reminds everyone of the true reason for the holiday?
If that’s still out, maybe another CB movie? They appeal to young and old alike!
