I need gift ideas for my mom's birthday. What's your favorite kitchen gadget or time saver? She and my dad are trying to eat healthier, so bonus points if your idea relates to healthy eating. TIA!

I love my salad spinner too. I never would have thought it would make so much of a difference, but it does. I love my apple corer too. I use that at least a few times a week.
I love my OXO silicon tipped tongs, but they are not really related to healthy cooking at all.
I think the small food processors (4 cups ish) are great for making healthy versions of other foods. I also love my oil mister from Crate and Barrel, helps with using less oil for pans.

salad spinner, immersion blender, a mandolin/hand chopper thing...not sure what the actual term is but one of those choppers that has a reservoir you put whole veggies in and then you push down on the handle repeatedly to chop it.

My immersion blender and my cuisanart mini blender pretty much live on my counter. I love the mandolin because my knife skills suck. I have the pasta attachment for the kitchen aid mixer as well as the meat grinder and actually do use both (suck it rising food prices and 4.99/lb ground beef!). It really depends on what your mom likes to cook: smoothies - small blender, sauces and soup - immersion blender, etc...
