I am starting this the first Sunday in January. I want to use some downtime at the end of dec to get some meal prep going. What are your favorite make ahead tricks? I know i want to get some egg cups for breakfast made but looking for other ideas.
we are eating our way through the last remaining "no" items in our house now.
i be typing from me phone. typos and grammer dont count.
I'm not a fan of freezer meals in general. I do make something in the crockpot every Sunday that can get me through the first half of the week for lunches. I make a lot of chicken & vegetable soups, chili, etc. Pinterest has a lot of crock pot recipes.
what i did yesterday: baked 3 sweet potatoes that got separated into 5 containers. baked and shredded spaghetti squash made veal/beef bolognese (some will get frozen) made asparagus soup boiled eggs (only enough for monday-wednesday) made mayo cooked seasoned ground beef prepped veggies (wash mushrooms, dice red and sweet onions, wash lettuce, etc.)
other than soups or stews i am not a fan of freezer meals, but doing a good bit of prep on the weekend is the best way to make sure i stay on track.
I make a couple trays of Asian meatballs for the freezer. I grill, slice and freeze chicken breasts for week day salads. I make pork verde in a crock pot and then freeze in portions for pork verde stew or tacos salads. I never really froze too much. Mostly I would cook stuff on Sundays for the week.
Sundays-pot of soup (or pulled pork or something) for lunches; big thing of sweet potato hash for breakfasts.
Mondays- 2 pans of roasted veges for lunches throughout the week (and dinner that night of course), If I'm eating spaghetti squash that week I'll make it this night as well.
Every other day I make scrambled eggs, slightly undercooked, for the next 2 days of breakfast.
