I have a baby shower that I am attending out of town. We're making it a day trip and need to bring a salad or side dish as a contribution. We will be leaving around 830am and the party is at 2. Would be great to be able to make the night before, and have it travel well (not need to be kept cool...)
I'm willing to have to 'construct' it on site, or heat/bake something on site as well.
I've thought of stopping at a store once we get there and picking up something already made, but would prefer to have something homemade...
I'm going to add the comment that I think it's stupid to expect people traveling from a distance to bring something. I would never ask my out of town family or guests to bring food.
I'm thinking if you make something that you could freeze, it would defrost on the way to the shower and then reheat once you arrive? Like meatballs or marinated beef or chicken appetizer bites.
I don't have a recipe, but what if you bought avocados and one of those dried mixed for gaucomole...you can dice up the avocado's there and mix it up (better that way anyways so it does brown as fast) and a bag of tortilla chips

(And I agree, it is a bit crazy to "require" out of town-ers to bring something besides a loaf of bread or drinks. ) The three co-hosts are a bit young, so I'm giving them a pass and trying to help out!)
