No, not too early, IMO, especially if you still have to brine. That's usually 1-2 days, right?

I brine for 24 hours, then I like to let it sit in the fridge to dry out a bit for maybe an overnight or so. So yeah.

No, that's perfect! I hosted my ILs today. We made a 13 lb turkey and I put it in to defrost last week Sunday. When I took it out to brine yesterday it was still a tiny bit icy.

My 12 pounder is going in the fridge tonight. I usually need 3 days for a full thaw, but school mornings are hectic enough that I don't want to risk forgetting tomorrow. The extra 12 hours won't hurt.
