winecat it was some random brand from a health food store. Ingredients really, truly pressed almond milk with no fillers. The store was called society faire.
My favorite now is the Giant brand/natures promise unsweetened vanilla. But damn if the real almond milk froths like heaven! (Coffee snob)
I know! I can give up wine for 30 days much easier than cream in my coffee. I tried that date/coconut combo people recommend and it was not good.

H and I both love this Pad Thai recipe. Discovered it during my first W30 and have made it many times since then! I use almond butter instead of sunflower butter in the sauce.

Someone mentioned this Kenyan Braised beef in another thread. I made it as one of my first whole 30 meals and served it with sweet potatoes. It was great and heated up well for two days as lunches. I used kale instead of collard greens (though will try those next time, they just looked gross at the store), and did not add fennel seeds or ginger because I was out. I also forgot the lemon, so it's a pretty forgiving recipe.
We made this last night - just omitted the sugar, switched up the oil to walnut oil, and obviously served with veggies instead of noodles. It was great, and pretty easy!
Tonight I'm doing a big flank steak in a chimichurri marinade. The leftovers are going to get cut up into a big batch of frittata muffins for breakfast.
Does anyone have a good gumbo recipe I can make in the crockpot? Or something similar without the seafood? I have gumbo meat hiding in the back of my freezer
I made this soup and it was SO good. It's the best soup I ever made by far and maybe even the best soup I've ever had!! Coconut Shrimp Soup. A little pricey depending on how much shrimp costs where you live but it makes a lot. I've been eating it since Saturday and there is still a little bit left:
