I cooked this hash on Sunday and have been eating it for breakfast all week, either reheated in the microwave at work or in a pan with a little olive oil at home. I add either a fried egg, sliced chicken-apple sausage, or veggie fritatta to round it out.
I've been grating it, and sauteeing it in ghee, with just a bit of salt and pepper. Mix in some sausage. Served with a poached egg on top. It's like, my version of a Whole 30 eggs benedict.
