In the summer, I brush on a little bit of olive oil and sprinkle on some garlic salt, and throw them on the grill for ~7 minutes, rolling them over about halfway through.
On the stove - throw them in a steamer pot, covered with garlic and shallots in the water below, and steam for 5-7 minutes.

I steam it and toss it with some lemon and garlic salt. I'll also sautee it with olive oil and other veggies and eat it with pasta or rice. In summer, I coat it with vinaigrette and grill it.

I roast it, or throw it in stir fry.
I use olive oil, avocado oil, or wok oil (the wok oil already has ginger, and garlic, and something else). Then season it with just salt or salt and garlic.
I usually just boil it for a few minutes so it is soft but still crisp. I don't make it often because even though I really like it H will take 1 bite and immediately start complaining about how bad is pee smells. Not worth it.
