I'm not coping well. I had bloodwork done to try to figure out the cause last month. My B12 levels are fine. I'm now on Vitamin D pills 1x week for 8 weeks to see if that helps bring those levels up. I'm trying to not take naps after work and just go to bed early to ensure I'm getting enough sleep at night.
My iron levels are super low right now and my body just won't absorb it. Right now, I got to bed early, lay off the caffeine (except for one cup in the morning), eat as healthy as I can, and keep hydrated. I can't nap during the day while working and I don't get any breaks, so I try to get as much done around the house as soon as I'm done so that I can relax. Fatigue sucks.

I had 2 iron infusions about 6 months ago, and my levels are holding strong. My body cannot absorb well, and after my UC flare, I depleted all my iron stores. Is that an option for you?
I agree, cut back on caffeine, keep lot to early morning, hydrate, and eat a balanced diet. Smaller more frequent meals.
