Snacks should have at least two components of the meal template. So a veg and a fat, or a protein and a veg or a protein and a fat.
For snacks, I used to do a can of tuna and some homemade mayo.
Lara bars are a compliant snack. Many of them, but not all. Check the ingredients.
Celery and almond butter (veg and fat/protein)
Avocado/Guac (may be compliant at Whole Foods) and cucumbers or peppers to use as dippers.
Those are just a few ideas.
