A couple of weeks ago I bought organic chicken thighs on sale. I browned them with a seasoning, browned some onions and threw them in a bag with some veggie broth to freeze. I put them in the slow cooker this morning before work and added a couple frozen veggies (green beans and cauliflower) on the side. I think I will prep these more often for middle/end of the week easy food.
How long do your cooked veggies last in the fridge?
The fresh vegetables at my Costco are great but the quantities are enormous.
Cooked, they last about a week IME.

No I've never really had Paleo bread. It's just not something I'm really interested in. If I want a baked good treat I just get a GF substitute. But that's a treat and not a regular thing.
I'm also planning on doing my cooking the night before most of the time. I'm cooking up several days worth of sausages tonight that I'll eat for some breakfasts.

I'm not planning on looking for this during my Whole30. Trying to get away from sandwiches in general. I did see a post on a blog somewhere this past week where they made a "sandwich" out of eggs with bacon in the middle. And fillings wrapped in lettuce.

I try to meal plan on Thurs/Fri and then grocery shop and meal prep over the weekend. For example, I grocery shopped last night after the kids were in bed and today I made white chicken chili (I'm post W30 so eating beans) for some lunches this week, a dozen HB eggs, carnitas in the crock pot to crisp up and eat throughout the week, and have chicken breasts marinating for tomorrow. I also double a lot of the things I make so we're sure to have leftovers. Chicken chili lime burger patties from Trader Joe's are also in my freezer for the nights I try to tell myself I don't want anything I've made and should just pick up a pizza.

These are the main things I do. H throws the shredded pork on a baking sheet and crisps it under the broiler for carnitas. Delicious.
We also do salsa chicken regularly--couple of chicken breasts in the slow cooker, cover with jarred salsa (the Kirkland Signature organic is good), cook all day. Use for pretty much anything.
I do the meal planning and grocery list on Sunday and then shop on Monday. During a typical week I will: Cut and Roast: Broccoli, Sweet potato cubes and Cauli-rice Bone broth of some kind in the Instapot 1 Soup/Stew/Chili Mayo, Plain and 1 speciality (Chipotle and roasted garlic are recent favorites) Plus having the mayo ready means that I can make a quick and creamy salad dressing by just adding 1 TBS of mayo + whatever acid + extra oil Cook a big batch of 2-3 main proteins (This week we made Tikka Masala from The Domestic Man, Orange Chicken and Lamb Kofta)
