As of late, I love love love broccoli salad with bacon and sunflower seeds. So good!
It is 1 head broccoli, as many raisins, shelled sunflower seeds and bacon piece as you want. Mix with a dressing that is 1/4 c sugar, 2 tbsp white vinegar and 1 cup mayo. So so good!
Other than that, we are just slapping meat on the grill and making fresh veggie sides. So yummy~
Within the past week I've made the chocolate chip cookies and the chocolate ice cream from Annie's Eats.
A few months ago I made a great roasted pork tenderloin with Dijon/white wine sauce. I picked up a tenderloin at the store this weekend and now I can't track down the recipe
i have been on a balsamic roasted asparagus topped w/ goat cheese kick for about a year now. it doesn't seem to be slowing down. there's no recipe. you just, ya know, roast asparagus after it sits in balsamic for a little bit, and top w/ crumbled goat cheese when you take it out of the oven.
On the broccoli- I like to add red onion and cheese tortellini and I've got a meal.
I've been doing a "mexican lasagna"- I take some pork and put it in the crockpot with green chiles, peppers, onions, and chipotle sauce. When it's done I shred it up. I take a couple of cans of black beans and corn. Then I use tortillas instead of noodles and layer it all up with cheese and salsa instead of marinara. It's simple and cheap. Now that I'm thinking about it I may need to see how this freezes.
My husband made these Bourbon Brined Pork Chops on saturday and they were fantastic. I didn't try the Volcanic Apple Sauce but he said it was great too.
This is one of my favorite potato salads; I make it all summer long. I made it this past weekend for the first time this year and it's just so good. You can vary the herbs, use a different vinegar, add a little dijon mustard, add green onions, peas, etc. if you want. It's very versatile.
Dilly Potatoes
1 pasteurized egg 3/4 cup light olive oil (evoo is too strong of a flavor) 1/4 cup white wine vinegar 1 t salt 1 t pepper 1/2 t minced garlic 2 T chopped parsley 2 T chopped dill 1 T chopped basil 5 lbs red skin potatoes (halved if larger size)
Boil potatoes until tender but not mushy. Drain well. Whisk egg until light colored and frothy. Slowly add oil while whisking to combine. Add other ingredients and mix well. Pour over potatoes and chill well, preferably overnight.
Note: It will smell really good while you're making it, but if you taste it before it chills, all you'll taste is vinegar. The flavor will mellow as it chills, I promise.

I think that's the recipe for the broc salad I've been making/eating for years. It's SUPER good...and even if you knock back the sugar amount, it tastes the same, still super good!

The chicken with tomato-herb pan sauce from Annie's Eats became a quick favorite in our house. It's also super fast to make, so it's great for weeknights.
Serves 4 2 cups Shredded Cooked Chicken Breasts 1/4 cup bbq sauce 1/4 teaspoon chili powder (optional) 4 Hamburger Buns Combine Chicken, BBQ Sauce and Chili powder in sauce pan and heat to serving temperature. Spoon into Hamburger Buns. 7 Points Plus per serving. 273 calories 8g Fat 2g Sat Fat 24g Carb 1g Fiber 25g Protein You could use lite Whole Wheat Buns to get more fiber and less carbs.
