I love crockpot salsa chicken. Compliant salsa seems easy to find. I am having that all week for lunch with spinach, roasted peppers and onions and guac. Added green onions and cilantro previously and it was super yummy.
Carnitas! I buy a huge pork shoulder at Costco and cook it overnight, slow and low is my method. We eat one portion for dinner then separate 4 more portions for other dinners. Its so delicious, all I do is add salt and pepper to the outside before covering it with foil and into the oven.
Day 8. I love making a big "taco salad": green leaf or romaine lettuce topped with seasoned grass-fed ground beef, half an avocado, chopped bell pepper, maybe some green onions, and salsa as dressing. Gooood stuff.
