Gluten Free Mac & Cheese

I wanted to make some mac and cheese for dinner this weekend but I cannot find a good recipe that is GF that has decent reviews across the board. One person loves it, the next reviewer has tasted better dog food.

Anyone have a tried and true recipe that tastes great??

I'm not very familiar with gluten free but a quick google search said that most cheeses were acceptable so here goes...

This recipe is amazing! It is not your traditional creamy, saucy mac & cheese but it actually turned me away from that style and onto recipes for a more solid, baked mac & cheese. I would assume you can substitute a gluten free pasta and be good to go.

How about quinoa mac and cheese? Quinoa is naturally gluten-free.
