If you don't like "over the top" stuff, I've been watching Shirobako, it's about a group of you women starting out in the anime industry. It's so not "over the top" you may find it boring, actually but I was surprised how much I liked it. And I really like that it's not about high schoolers, for a change.
And I just finished rewatching Toradora, your H might have seen it already because it's a few years old, but it is SO good AND Crunchyroll even has the dub, if you like dubs. It's a high school romantic comedy type
I feel like I could go on and on, but I could do better if you narrowed it down a bit, so if you want more recs just let me know, haha.
Baka and Test was hilarious Bleach I really liked (I watched over 300 episodes twice) Sword Art Online SAO was interesting especially if you game Noragami I never got into Attack on Titan but my H liked it (people actually died) Soul Eater Soul Eater Not Fairy Tale Basilisk Cowboy-Be-boop I personally did not like One-Piece Blood Lad Vanguard Tokyo Ghoul Devil Part Timer
Is this the one that Scarlet Johansson is tapped to play the lead in the movie in? I tried the first 5 minutes and it was a little out there for me. Should I power through? What did you like about it?
I think GitS and GitS-SAC were both good. Yes, there is the techno sci-fi part (although personally, I think that part is super cool), but fundamentally, the stories were good, and often philosophically deep. GitS explores what it means to be human, and humanity's place in an increasingly technological society, as well as government's role as well.
So H watches crunchyroll religiously. I watched Yona of the Dawn with him and actually really liked it. Now we have to wait in real time for the next episode. What should we watch next? I can't handle the really over the top stuff, but I'm enjoying it.

It was hard for me to get into bleach in the beginning TBH it is more interesting when they go back to Soul Society. But this was the beginning of me getting into Anime more.

My favorites that I always recommend are: Fruits Basket (it goes from fluff to dark though so be warned), Cowboy Beebop, Princess Jellyfish, Berserk, Love Hina, Ranma 1/2, Rurouni Kenshin (or Samurai X in US), Fushigi Yuugi and any movie that Miyazaki has made (my favorite being Spirited Away).
