I'm looking for inspiration here. Recipes or ideas appreciated. I'm in a rut and I want to go meatless at least half the time instead of 1 or 2 nights a week. My family is moderately adventurous and we don't do mushrooms.
My favorite vegetarian blogs/recipes sites are Sprouted kitchen, 101 cookbooks, and post punk kitchen. My favorite vegetarian cookbooks are by ottolenghi (he has cookbooks which you can get on amazon and does recipes for the guardian in London which can be found online) and Deborah Madison from San Francisco. I do a lot with quinoa - quinoa burgers, quinoa enchilada bake, quinoa stuffed peppers. Also, eggplant is a good hearty substitute for meaty dishes. These are some of my tried and trues:
Sweet potatoes are also a good substitute. They pair well with black beans for tortillas or enchiladas, or with chickpeas and feta for stuffing in a pita or throwing on pasta.
My DH and DS love meat so to cut down on it I often make things that have meat in them, like chili, but cut way back on the meat and bump up the veggies and beans.

Hmm not too fancy but we like breakfast for dinner-like a cheesy scramble with avocado, we also do cheese enchiladas or potato tacos. Pasta primavera too.
I feel like most of my meatless meals are pretty common and boring. Vegetable soup, pasta primavera, black beans and rice, veggie quesadillas (with lots of black beans and peppers,) grilled cheese and tomato soup.
