Long story short, DH has decided he wants to try out being a vegetarian for a month and I'm going along with it for support and because I don't want to cook separate meals. I asked him if he wanted to wait until after Easter (he stuffs himself with ham and beef) but he said no and that it would be a good challenge.
I got the menu from MIL:
ham
sausage cheese balls
potato salad
broccoli/cheese casserole
pineapple bread casserole
deviled eggs
green salad
The first two items are obviously out. Anyone have any good vegetarian mains/sides that aren't carb heavy?? Gracias!
I'd just eat everything else that wasn't meat and call it a day.
Yeah, this too. I have never liked ham, so I usually just fill up on sides at easter anyway. When i was younger, my aunt took pity on me and made a dish of ravioli to go with the easter ham.
The planned meal looks like plenty to fill up on, even without the meat.

Let me add that it would be nice to have a vegetable suggestion just because the rest of it is kind of heavy besides the green salad.
Huh. I can think of non-carb main dish vegetable suggestions. Unless you just want vegetables. I think sauteed asparagus goes great with the other stuff on your menu.

Hmm, I think I recall seeing white and purple asparagus at the store the other night. Healthy and festive!
1 can shoepeg corn, drained 1 can French cut green beans, drained 1/4 cup mayo 1/4 cup sharp cheddar cheese 1/4 cup chopped celery 1/4 cup diced red onion Salt, pepper for seasoning Mix all that together, put in baking dish.
Melt a couple tbls of unsalted butter. Add some dried bread or breadcrumbs or the bread cubes from the stuffing box that you get around thanksgiving. Coat bread. Put bread topping on the mix of succotash.
