I'm looking for super easy dinner ideas because I have zero energy right now with this baby. Bonus points for non-dairy recipes. Baby doesn't like cheese or milk.
Mine are lame and super easy. Take beef roast, throw in a large can of enchilada sauce, shred and make tacos. I also like to take chicken breasts, a packet of italian dressing mix, a can of chicken broth and about 3 tbs of butter and throw them in and serve with potatoes.
She cooks it on the stove but I cook it in a slow cooker and it's one of our fave meals. Three ingridients and cook. I'll usually serve it on King's Hawaiian bread. And then get bagged coleslaw mix, prep the night before and done.
I put a few chicken breasts in salsa and let it cook on low. then I shred the chicken and make tacos. Its literally the easiest thing I make but sooo good.

My sweet potato and black bean chili!
Dice one each: onion, red bell pepper, poblano pepper, carrot, and sweet potato. Add a can of diced tomatoes, a cup or so of frozen corn, and a cup of dry black beans (you can do straight from the bag and it's great but darker and cloudy so I soak them for a few hours and drain), and two 15 oz cans of diced tomatoes. Then I add a few gloves of garlic, a couple Tblsp of chili powder, and salt, and water almost to cover. Cook 8 hours on low.
