C's first birthday is coming up in a couple of months (ZOMG) and I need to pick a theme for her party. Any recommendations? I thought about going with a zoo theme, but that seems done, especially because her nursery theme is giraffes. But she doesn't really have any interests yet, so I have nothing to play off. Any ideas? What did you guys do for your kids' first birthdays, or what are you planning to do?

So, for us, the one-year-old party was more for us than for her (speaking about M here), since she had no clue what was going on - just that family was there and we were telling her it was okay to be messy with cake, haha.
Regardless, it is what you make it. I'd make it easy on yourself, honestly, so you can enjoy yourself and the day and not feel like you're herding cats. We did a BBQ at IL's house, and had family and only close family friends over (Godparents, etc). It was really fun and we got some great pictures from the day. C probably won't remember, nor will she care what theme you chose. As long as you're celebrating her, that's what matters. We just did cutesy girly things (flowers, pink, and I think some princessy stuff - I know, totally not your style), and gave her a smash cake (which she touched twice and looked at us like we were crazy). We did get her a hand-painted plate from Etsy that has her name on it that we will use for her birthdays in the future, so that is an idea.
Try not to stress over it, like I said. There will be plenty of room for themed birthdays as she gets older and can choose the theme herself.
Since both of my girls were born right before christmas I went easy and did christmas type themed birthdays since I would already have the house decorated lol (no help to you I know)
But what about just like a picnic theme or summer theme? Leaves it pretty open and I know theres tons of crap on pinterest for ideas to help.

I think you should do a baseball theme. I went to 1-year old b-day a few weeks ago, and it had a cute baseball theme. I think sport-themes can be unisex

Also, I'm in total denial that your child is almost 1, because that means my child is almost 1. Which can't be true since I gave birth to him yesterday, obviously.
We did a small bbq at the park by our house. I just did all different primary colors for table clothes, plates, etc., and a few decorations, cupcakes w/ different color balloons, and then some games like ring toss, etc.
Culturally, the one year party is a huge celebration in Korea. We had a really big party, but it was still tame compared to a lot of Korean ones.
We had a mild UP theme throughout our wedding (the recessional was Married Life from UP and we had a mailbox decorated a la UP for cards), so we continued it into his birthday with a lot of balloons and cake.
My sister compiled some highlights in a birthday video. Can you spot all the Nexties?
We did the same thing as alias, but at our house. Just bright primary colored tablecloths and balloons for decoration, and basic bbq food. It was low stress and fun. For 2 we will probably do baseball, since that's all he wants to play or watch on tv.
We did a very simple picnic at a local park. No theme. I just borrowed a tent from a friend and decorated it with balloons. I made a very elaborate cake with white rosette frosting all over it. For food I just made a few kinds of wraps that I cut up in to small bites with toothpicks. And i think we had chips. It was really nice for me because it required very little work so I could actually enjoy it.
I did a Curios George theme for her 2nd. I ordered a custom Curious George birthday tee shirt from the PBS store and got a puffy skirt to go with it. Super cute.
