I think if you like it, go for it. "Trendy" is kinda a overused word. Whats the point of finding things you like to not do them because someone in the world thinks it looks "so last year".
I don't like them for the allergen/dust issue. But I think they can look great
I definitely don't think they are out. Plus, I kind of agree with HouseGeek - it should be more about what you like and not being "on trend". (At least, within reason.)
upholstered headboards are always "in" in some fashion. just different shapes, or styles, or fabric depending on the season. if you like it, do it. don't let trends dictate.
I think more in your face styles with patterned fabrics have shown up in the last year or two. But I don't think it's more about what fabrics and colors are trendy than the upholstered headboard.
For example, I think tufted velvet will always be "in." Tangerine tufted velvet may look very early 2010s.

I think they look great, in most cases. I think if I were doing one, I'd want to DIY and make it easy to replace the cover. Fabric is something I get tired of VERY quickly.
DIYing it sounds daunting. How do you make your own? Is there a tutorial you would recommend?
If I were doing it myself, I'd probably use adhesive to attach batting or foam to a piece of plywood or MDF. Then I'd just staple the fabric around the back, like I was reupholstering a dining room chair. But I like things simple.
