I use Bob's Red Mill quick-cooking oats. Texture-wise, it's not as goopy and mushy as hot oatmeal. DD (age 7) will eat overnight oats and will eat baked oatmeal, but doesn't like the consistency of regular oatmeal.
I think the consistency of overnight oats is worse than regular oatmeal. But I like all forms of oatmeal, even cold, so it doesn't bother me. I only have 1 kid that will tolerate oatmeal in regular form but most will eat the baked (solid) form.
pennypenny, the Epicurious site seems to be down right now. But search "baked oatmeal" there and the first (maybe only?) recipe that comes up is one by Heidi Swanson. This one is a BIG hit in our house with all members of the family.
ETA: @tokenhoser also uses oats in a pancake recipe, but I didn't have any luck with that particular recipe, so didn't save the link. It called for egg whites and some kind of soft cheese (I think?) as well.

We make protein pancakes. I can't remember the exact ratios, but I think it's a cup or so of regular oats, a cup of cottage cheese, 6 egg whites, a dash of vanilla, and a tablespoon or two of sweetener (sugar, honey, maple syrup, etc.). Blend in a blender until smooth and allow to sit for a few minutes before cooking. They freeze and reheat really well.

I love them but only with steel cut oats. Roughly I use 1/4 cup oats and milk and a cup of Greek yogurt plus drizzle honey. The texture is chewy and not mushy at all. Very different than hot oatmeal texture but I like that too.
I hate regular oatmeal and I think overnight oats are just a more gross version. I do eat lots of oats though; I make the oat pancakes, and I use oat flour as a substitute in most recipes. I just put oats in the cuisinart to make the oat flour, and I use it to make muffins and cookies.
