I am leaving on Sunday for vacation for a week. H will be home with T. We are going to my inlaws this weekend, so I need to do all grocery shopping and cooking tonight.
What are some ideas for quick meals that I can leave for H and T?
Eh, I would proabably do the same thing. I would at least do the grocery shopping so the house is stocked up
I probably wouldn't worry much when it's two of them. They don't need big meals cleo suggested the stouffers which is good frozen pizza can he grill one night? Maybe pick up some burgers or hot dogs. My H and kids love the perdue popcorn chicken lots and lots of snacks lol
Can you make a tray of enchiladas? Cook ground beef with some diced peppers and onions and add some seasoning and then roll up, top with salsa and shredded cheese?

Its really not that hard to cook. I hate cooking and never did it. My husband always did. He's good at it, and he enjoys it. But then my husband started working much further away than me, and you're right, its not fair to our kids, and they need to eat and not at 10 p.m., so guess what? I looked at recipes online and found that I actually can cook. I may not enjoy it, and they may not be gourmet meals, but I can put together a well balanced meal for my family with relative ease, and I'm sure your husband can too.

Since you only have tonight to prep, I would do
Dinner out Pizza Frozen chicken with sweet potato fries Something you make tonight Sandwiches Macaroni and cheese with hot dogs Breakfast for dinner
You aren't going to make 7 nights worth of meals tonight, so pick one thing out two easy things. If he can't make what's on the list, then you have some major issues.
Sloppy joes, spaghetti and meatballs, broccoli rice casserole, sandwiches, crockpot pulled pork (sandwiches or served with various veggies and starches).
I'm thinking of stuff that's freezer friendly or easy for him to throw together with basic instructions.
I have no idea because my H leaves food for me when he leaves.

But I knew the first responses would be 'can he NOT cook'? I can cook, H can cook, but sometimes it's nice to help your partner out if they're busier than you at a particular time.
Right? I don't get the whole "you're submitting if you help a dude out just because it's nice" thing.
I am all for helping my spouse out but I travel a lot for work and sometimes I just do not have the time to get things ready for me to be oot. DH has had to figure it out and he and DS have a routine now. They have "their time" which typically involved pizza in the hot tub. I don't care if DS doesn't have the most nutritious meals. He is getting quality time with his dad and that is all that matters. Don't be afraid to let your DH "figure it out". They will both survive and probably have some good bonding time as well.
I would leave frozen pizzas, microwave mac n cheese, a ton of snacks and fruit, and plenty of stuff to make sandwiches - DH seems to make sandwiches for every meal that I am not here. As long as the kid gets food, I don't care if it is in sandwich form every night for a while, lol.

I agree. I went OOT for a few days in March alone and it never occurred to me to cook for H while I was gone but damn. Had I done that it would have been a really nice thing and he would have appreciated it. And vice versa.
