Haha! amaranth, that all went out the window when I found out I was expecting. Baby needed grains (and Doritos, apparently). Just looking for fresh ingredients and not crazy calorie wise
Eta- we have been living off things like burgers, tilapia, and baked chicken for dinner lately because I haven't felt like searching for recipes. Trying to bring back some flavor without ending up in the kitchen for an hour after work.
Baked salmon seasoned with herbs is my go-to quick dinner. While it bakes, I steam up some veggies or throw together a salad and make an easy side, like rice, noodles, or quinoa. It's tasty and all ready in under 20 minutes.
Cook ground turkey on the stove top. Once it's cooked, add barbecue sauce and simmer for a few minutes. Stuff the ground turkey into pita halves. Done. Then we do a veggie or something on the side. Super quick and easy, and makes great leftovers.
I do stir frys a lot. Marinated meat (usually chicken or pork), whatever veggies sounded good that week (often zucchini, broccoli, and peas), a little teriyaki sauce.
I also like to do pulled pork/chicken in the crockpot. Ginger ale and barbecue sauce.

I don't make this often but burrito bowls are fairly easy and they can be pretty healthy if you make them that way. Brown rice, black beans, chicken, corn, peppers, salsa/pico, etc. I add cheese and sour cream but leaving those off might make it healthier! Quesadillas are also pretty fast and easy. Plus tacos of course can be healthy. I always load mine up with sweet peppers!
Most of my meals are longer to make, but here are some quickies:
-Burrito(s)/ Bowls (one of our nearly weekly go-to)
-Gyros. I made Venison gyros on Friday and they were amazing! I did the meat in the crock pot all day, then the sauce took like 5 minutes to mix up and is healthy since it's made with greek yogurt. Add an onion and bam, quick amazing dinner
-Store-bought stir fry. This is quick, and Trader Joes has a lot of good frozen veggies. Just add rice.
-Salads with rotisserie chicken
-Breakfast for dinner! Smoothies, eggs, hashbrowns, bacon, etc.

For seasoning, I use lemon pepper. LOVE lemon pepper.
