I usually have a light meal beforehand. If it's a plated dinner & we didn't get to indicate our choice on the RSVP, I just ask the server for a veg meal. I've never had a problem with it. It's buffets that can get hard sometimes. I try to bulk up during cocktail hour.
I don't think I've ever been to a wedding that didn't offer a vegetarian option. But I mentioned in another thread, a (non-wedding) event I went to this weekend had no veg option so they brought me a clean plate with just the vegetable sides.
I eat before I go anywhere because I am tired of going hungry at events. If I know there is a vegetarian option, I will order it. I will not eat around the meat or eat anything that has touched meat and if there is meat on the plate I just send it back.

Meat broth and stock are usually a concern when it comes to just eating the sides. I couldn't eat the green beans at the last wedding I went to because it was cooked with ham chunks for flavor.
I find I get plenty full from apps, salad and the vegetable side. plus I always like to save room for like 3 pieces of cake. And yes, it is a benefit when you feel more of a buzz from eating less anyway.

I worked at a catering hall for a long time, and where I worked there was always some sort of vegetarian dish available to serve, even I it wasn't specifically offered.
At my wedding, we offered a chicken, beef, or vegetarian choice; we skipped any fish options.
i've been to a couple weddings w/o a vegetarian option, including one where the "vegetarian" option was fish (my husband and i made "you no eat meat? i make lamb!" jokes all night). but typically there's something.
i put snacks in my purse. and i make friends with the servers and sometimes they'll make me up a plate of sides/extra big salad/etc. i figure it's my job to feed myself and it's only one meal in a day. which is also what i told my mom when she had a nervous breakdown that we didn't have beef at our wedding. i told her to tell anyone who asked to have sausage for breakfast and a hamburger for lunch and to STFU.
Cville, we do that same line all the time. Aunt Voula a gem in the movie.
I have one friend who just went with the red snapper (we did a duet, snapper and filet) and some others that went with the veg entree. As a somewhat picky eater myself, I understand about your guests needing choices, especially dietary ones.
Only one time have I had an issue getting a veg meal at a wedding. The bride was amazing and made sure that my husband and I had a veg meal ordered. (She even showed us the caterer's reciept, stating that two veg meals were to be served.) We got spinach and a tomato. That's it. Cooked spinach and a half of a tomato.
At my wedding I had pasta with a few different choices for sauce and lots of salads, veggie & fruit dishes. I wanted everyone to be able to eat what they feel comfortable eating.
I haven't been to a wedding where weren't plenty of options for vegetarians.
