My problem is two fold- H and I are clean eaters already and looking at doing a whole 30. We are also totally financially strapped right now and I suck balls when it comes to meal planning.
Can you guys bombard me with links to 1. Casserole type recipes that can be assembled then frozen 2. Crock pot recipes that would just need a veggie added and 3. Things that will make good leftovers
For casserole like things the PaleOMG 5 Ingredient Pizza Pie is my go to. It always turns out and you can add whatever you want to it. I've made it and frozen the whole thing and I've always cut individual portions, wrapped and frozen them.
I also like to make the meat sauce recipe from Smitten Kitchen. The link is for a lasagna bolognese but just ignore the bechamel and pasta. It's not a paleo blog but this is my go to recipe. I'll usually add in some mushrooms and whatever other veggies we have in the fridge to use and then freeze quarts of it.
Nom Nom Paleo Kalua Pig is always good, cheap and can be made in a crock pot. We make it and then do tacos, omelets, BBQ pulled pork, and salad with it.
We usually hard boil about a dozen eggs a week and eat that with sauerkraut or salad or just as a quick snack. I usually also make a crustless quiche for fast breakfasts.
