I buy simmer sauces at the grocery store. Maya Kaimal makes a pretty good one.
Last week, I had butter chicken t a restaurant that was excellent. When the weather cools down o I can cook again, I'm going to try making the sauce myself.
I love making tikka masala at home. I'm sure it is not the most authentic because I don't have all of the separate spices to make my own curry, but it is still freakin delicious.
If you like spinach look for a saag paneer. It is always delicious at restaurants, and it is fairly easy to make at home, You can even make the paneer from whole milk and buttermilk.

I also buy the simmer sauces from the grocery store-I use butter chicken and throw in green beans and tomatoes and serve it over rice with naan. It's a family favorite.
Matar Paneer (peas & cheese in a tomato sauce) Dal (lentils) is always good over rice Aloo Gobi (Potato & Cauliflower) Rajma (kidney beans in sauce) over rice
I could go on but these are pretty simple, super yummy dishes. Of course I would also add Butter Chicken to that list but I'm not a big meat eater and honestly you don't miss it in Indian cuisine; it's so flavourful. I love making the butter chicken sauce with cheese instead of chicken.
My only consolation after reading this thread is that, in spite of the fact that we're not having Indian food tonight, I am going to get some amazing Persian food at this dinner party.
