I am cooking for the in-laws on Tuesday and would love some meal ideas. Would like something that knocks their socks off but also doesn't test my culinary talents too terribly much.
MIL hates seafood - so any recipes involving that are out.
You are already on a great start by skipping seafood. Everyone likes their needs to be catered to. For my parents, I made roast chicken, spring salad (spinach-strawberries and poppy seed dressing) grilled corn and ciabatta.

I like cornish hens. Most people (assuming they eat meat, of course) are good with poultry. They're totally easy to roast, and they look impressive arranged on a platter. A couple of fancy sides like potatoes and a veggie, some crusty rolls, and you're good to go.
