so...this is a pet peeve of mine...breakfast is breakfast, lunch is lunch...brunch is breakfast and lunch combined...you have an awesome breakfast planned with a random green salad...
I'm giving you a pass though because the strata, while more breakfasty, I could see being served for lunch as well...and fruit fits equally into both.
The easy fix to me here is to serve a spiral sliced ham instead of the breakfast sausage or ham steak...along with rolls and different condiments such as mayo/mustard/tomatoes/onions
Agreed with this being a great breakfast menu, but not brunch. Small hams are hard to find, but they do freeze well so you could use it later. You could aldo do a chicken salad or get a turkey breast, any sort of meat that would make sandwiches.
I like egg dishes for brunch, so I like all of your menu options.
I would expand the drink selection a little, mostly because I don't love mimosas or orange juice. I prefer bloody marys. But if that's too much, you can do bellinis (since they are also a champagne drink). I'd also throw in some iced tea or hot tea - just a small box of tea bags and a kettle of water will give you that option, which should be cheap and easy.
I agree with the others about the ham, chicken salad, one thing a bit more "lunchy." I struggled with that the last time I hosted brunch as well.
Another idea for a drink (if you don't want two champagne drinks) is a sangria. I made a white peach basil sangria that was a HUGE hit at Easter brunch.
