on sandwiches, cereal and Healthy Choice freezer meals.
H is home but he works long hours and typically eats all his meals on the ship. I won't cook just for myself because it makes too much and I don't like leftovers. While he's underway I typically eat at my parents house a few nights a week but since he's home I feel weird doing that.

Sounds like me last night. DH called at 5:30pm and I go hey! I just had a snack. When are you coming home? And he says he's eating dinner at work. So I made dinner but instead of saving half for lunch today I ate everything and was horribly full. My advice would be make however much you would for two people and have leftovers for lunch. Just don't fail at it like me.
Sometimes I keep the ingredients for tacos or quesadillas around that way I can make one or two at a time as I get hungry.
Or I make meals out of snack foods. I'll get some hummus and tortilla chips, then some cheese pieces and fruit and maybe a handful of nuts. Omg cookies!

I don't understand this not liking leftovers. They're awesome b/c I get all the joy of a good meal with none of the cleanup! What's not to love?
I do tend to go more toward snack meals when alone. Nachos (healthy!), hummus and carrots/chips, spinach dip. I recently started cheating with the dip b/c I was too starved to do my scratch recipe, so I get frozen creamed spinach and doctor it up with spices, cheese, and artichoke hearts. It works! And when I'm really indulgent, it's brie with roasted garlic bread.
If you eat freezer meals then I don't see why you wouldn't eat leftovers. Why don't you make a couple freezeable meals and portion them out then reheat has you go and rotate between the different ones. Grab a bag if salad and and few different toppings and have side salads with the frozen meals.
This is why I freeze meals in individual servings. The freezer currently has 2-3 kinds of pasta sauce, 1-2 kinds of chili, 4-6 types of soup, 1-2 kinds of curry, etc...
Lots of meals are perfectly fine frozen and reheated. These save my butt when I'm late getting home from a work trip and can't get groceries for a day or two, and they're great for DH when I'm on the road and he wants homemade food (he has a very limited repetoire of meals he can make, and rarely has the time to cook).

I love leftovers.
When I cook for myself, I make a normal sized meal, and have 2 more nights worth of dinner. I don't mine eating the same thing for a few days in a row.
If you absolutely hate leftovers, there are a ton of single serving recipes out there... you just have to do a little work to search for them. Or cut a normal recipe in half. Not that hard.
