Hey guys, One of my coworkers was just diagnosed with stage 4 colon cancer. It has spread to his liver and the prognosis is very bad.. we are all so sad for him. He is only 44 years old and has 2 elementary school age children. They just moved and a bunch of teachrs from our school went to their house to help his wife pack - he has not been released from the hospital and we have no idea if he will... it's basically a horrible situation.
We are now making meals to take to his family so his wife doesn't have to cook. I figure I should make a few since I'm on maternity leave and have way more time than the rest of the teachers. I want to do something to help.
Anyone have some ideas of freezer meals, or casserole type things, that I could make to take to them?? I plan to look on pinterest as well but thought I would ask here.
I am not much of a cooker but what a horrible thing to happen. Ugh, so heartbreaking. I have no clue what I would do if I was told that I had stage 4 cancer and was going to die. I would be so scared to die with young children I would also be heartbroken if I was his wife.
What a sad situation. Your co-worker will be in my thoughts and prayers.

Thanks.. it's really sad. It really is terrifying to think how in one instant your life can change like that. Our school is going through some tough times right now between him, who is one of our administrators actually, and then another beloved teacher being diagnosed with Leukemia all in the same week. It's devastating and I think we are all just looking for some way to help out and feel like we are doing something for them. It has been amazing to see our staff pull together though - 40 teachers and staff members showed up at his house last week to pack boxes and help them move. It is a great thing to see and makes me appreciate my school family that much more.

I always do stuffed shells (they freeze well) or lasagna. I also have a recipe for creamy baked chicken that is usually a hit (Boneless Skinless chicken breast, 1 can cream of chicken spread over, top with baby swiss cheese, top with bread crumbs and melted butter cook @ 350 until chicken is done.. usually 45 min)

Chili, chicken soup, any soup really. I freeze green chicken enchiladas when I make them, I just freeze the sauce separately in a ziplock. Lasagna, stromboli, any pasta.

My favorites are the "dump chicken" recipes. Just throw a bunch of stuff in a ziploc and freeze! There's some all over Google and Pinterest. My favorites have been dijon chicken (basically chicken, dijon mustard, and lemons in a bag) and herb wine chicken.
