i'm really bad at this b/c i don't use a lot of recipes. i just taste as i go. but i'm sure you can google or pinterest these to find good recipes.
i love chicken tikka masala. (saute onion then cubed chicken, add garam masala, cumin, red pepper. add a can of diced tomatoes, some heavy cream or evap. milk & cornstarch slurry to thicken. simmer & serve over jasmine rice.)
i like pioneer woman's meatloaf (the one wrapped in bacon.) it gives us leftovers for days.
couscous or quinoa w/ grilled vegetables & fresh herbs
burritos w/ brown rice, black beans, tomatoes, lettuce avocado slices, black bean salsa (black beans, corn, tomato, red onion, cilantro, lemon juice,) cheese, sour cream in a spinach tortilla.
The only thing I do differently is I up the macaroni to 1 3/4 cups and omit the pimento. I can serve it by itself with some garlic bread and and a vegetable dish of some sort for a great meal for my vegetarian husband, or I can use it as a side dish for anything from schnitzels to baked chicken or braised round or cube steaks. It's a versatile dish and I always have the ingredients on hand.

Roasted Chicken Breast with Sweet Poyatoes & Carrots
Preheat the oven to 400 degrees Line cookie sheet with parchment paper Place boneless skinless chicken breast on one side of the pan Peel & dice sweet potatoes & carrots fairly small (1/2" maybe) and put on the pan Drizzle everything with extra virgin olive oil Sprinkle with salt & pepper to taste Roast for 25 minutes - turn the veggies 1/2 way through but leave the chicken alone
We have this about once a week, takes very little prep, only one pan and cooks pretty quick!

I recently made a honey-ginger-scallion dressing to go over pan-sauteed tilapia. It was really good. I made it again without the scallions and put it over chicken and it was still good.
But usually if I don't have a recipe in mind, I'll just season the protein with one of those McCormick or Mrs. Dash seasoning mixes, microwave a side of frozen veggies and some instant rice or cous cous.

We do pasta with garlic and olive oil a lot. I toss in whatever veggies are left in the fridge to use them up and grilled chicken or ham if we have that.
