I'm in a funk. Yuck. I know I'm super stressed about getting the rest of our stuff out of the old house (the movers really just took the furniture/big things) and getting it on the rental market (which was supposed to have happened August 15!). Also, it's not helping that I haven't eaten all day.
Which is all just to say that I need to focus on something productive, like making my weekend grocery shopping list. We have a kitchen now that we can actually cook in, but I'm completely at a loss because I am woefully out of practice. So, can you link me to a favorite recipe or two? What's on your menu for the week?
Head up 95 to Wegmans in Columbia. Seriously, their meats save our asses. They have premarinated chicken breasts and pork loins that are vacuum sealed and last for10 days or so weeks in the fridge. They are awesome for quick dinners. We can cook them in about 20m in our convention oven. They also vacuum seal steaks.

Sorry to hear you're in a funk TWB. Moving sucks. Here's hoping you guys find the time to get it done soon and drop the stress level a bit.
Cost.co roasted chicken always saves my butt and E loves it. Plus the price can't be beat! I'll buy one and make mashed potatoes or rice and a veggie or salad on the side. Super quick. Or I'll use the chicken to make quick tacos/burritos. The leftover chicken makes great chicken salad sandwiches for later.
When you guys are more settled...these chicken taquitos on Annie's Eats are awesome. You can use the pre-cooked chicken in these too. And they freeze well so you can make a whole batch and save some for later. I add a can of beans to stretch the filling like she recommends.
But chicken in the crock, with salsa, black beans, and whatever veggies you like (I always use corn and sometimes chopped green beans). Cook on low all day. (for amounts, I use about a pound of the chicken, one can of beans and one jar of salsa. feeds the three of us two meals each).
Buy tortillas and shredded mexican cheese. Sprinkle cheese on tortilla, spoon on some of the mixture from the crock (use slotted spoon to make sure it's not too wet, and spread it out), top with more cheese and another tortilla. Heat for a couple mins on each side in the frying pan.
Serve with whatever fixings you like - sour cream, guac. So yum! We eat it often
