I am of no help but this reminds me that DH and I took a cookbook from his grandma that was from the 60s or 70s and there is A LOT of aspic recipes. I told him I wanted to try one out. Maybe when I do I can serve a relish tray on the side. LOL
My grandma once served "shrimp aspic" for Christmas. She used lemon jello! Of course, it was uneaten. I lived with her and she served it to me a couple times a day until it was gone. I took a large scoop out of the bowl every time she left the house and threw it away. It was awful.
There are also a lot of interesting loafs in the cookbook. Kind of like this.

I have a jar of pickled Brussel sprouts sitting in my fridge right now that I'm afraid to eat. One of these days I'm going to just get a little drunk and go for it, I bet they're awesome.
My mom's (who is the best person to ever walk this goddamn earth) favorite part of Thanksgiving is the relish tray.
So my mental reaction to the OP making fun a relish tray was an immediate and incredible overreaction. In my head, I was like "WELL FUCK YOU AND CHOKE ON AN OLIVE. MY MOM LOVES HER RELISH TRAY."

If you put jarred pickled hot cauliflower on the tray, you're winning at life.
My MIL prepares the best relish tray. There are many reasons to be hurt and angry about my BIL, but missing out on my MIL's relish tray because I can't be in the same room with him has to be #1.
We never called that a relish tray, but without it we would have gnawed our arms off. My mom always said she would serve food at 2 but it was closer to 5. She also would not let anyone in the kitchen to get breakfast so we were ravenous.
It's not a party without a relish tray. We put pickles, sweet and dill, green olives, black olives, dilly beans, marinated mushrooms, some other pickled veggies in it. It is usually the first thing empty and I have to refill a few times. At our Christmas party - I do 3 relish trays. Get Creative. Think Phoebe and all she did with cups.

I made tomato aspic once. It was surprisingly tasty!
Oooo yes. Also once I had pickled green beans. They were DELICIOUS. Not sure where you'd be able to find those.

I've seen them around in a couple of random stores, like a fancy grocery store, mom and pop produce store, etc. Never in a big chain.
We make these too! So yum. We call them Dilly Beans. They also carry them in our local grocery stores but they are Michigan made brand/company so maybe a regional thing.
