Later this week: microwaved quinoa and brown rice (SO glad I bought this on a whim at Costco!) with roasted mini peppers and goat cheese chicken francaise over spaghetti gnocchi bolognese (TBD vegetables with these meals)
I will probably pick up a Costco chicken one night and we'll have that with a vegetable and starch, then I will repurpose the leftovers as soup or quesadillas.
Pizza, if I'm not too lazy to make the dough in advance.
I have ham/bean/vegetable soup in the freezer - it'll be useful for when I'm just not feeling it. Or I'll just bat my eyes and drop hints to MH that going out for pho or ramen would be fun.

We eat leftovers at a minimum of 2-3 nights per week. We are a cook once, eat twice 2 person HH (LAZY and more MM, LOL)
Pizza margharita Domino beans over rice Shrimp scampi Salmon cakes, roasted sweet potato wedges and spinach salad Grilled cheese and tomato soup a night out and a night of leftovers.
Tonight will be turkey pot pie with the last of the leftovers from Thanksgiving (except the turkey meat, I'll dice up and freeze for future cooking whatever is left) Tomorrow will be leftovers/freezer food Wednesday will be sausage, sauerkraut and roasted potatoes Thursday will be leftovers/freezer food Friday is a buddy's going away party at a local pub/restaurant, so we will probably eat there Saturday, who knows, too far out to plan at the moment
We have a few frozen meals since I have class and study time this week. Lasagna, beef/broccoli, venison chili, side salads and frozen veggie steamers. This is pay week so Friday we will go out for dinner.
Tonight: left over's from thanksgiving Tuesday: beef strognoff Wednesday: grilled cheese and tomato soup Thursday: bbq chicken packet (chicken breast, bbq in tin foil and bake) Friday: pizza Saturday: who knows to far out to plan but usually on Sat we go out for dinner.
I feel like I posted this on another board, but has already changed. Plus, we eat out/unhealthy to often with the holidays!

We have so many leftovers and odds and ends to use up, so I've just been making meals around all that stuff.
Monday- BBQ pork ribs, baked mac and cheese, roasted brussel sprouts Tuesday- turkey pot pie Wednesday- crispy baked chicken (or something else that goes with baked mac and cheese), salad Thursday- beef tips over rice pilaf, roasted carrots Friday- hopefully the end of leftovers...but we'll see.
Sunday: Chicken, Broccoli and Couscous Monday: Salmon, roasted brussel sprouts and butternut squash Tuesday: Chicken stirfry Wednesday: Honey Garlic Meatballs, served over rice. Steamed broccoli on the side
Recipe for Honey Garlic Meatballs:
Meatballs:
2 lbs ground beef (or half ground beef/half ground turkey) 1 cup breadcrumbs 1/2 cup chopped onion 2 TB minced garlic 2 eggs 1 tsp salt
Form into balls and bake on a cookie sheet for 15 minutes @ 400 degrees.
Sauce: 1 TB butter minced garlic / onion 3/4 cup ketchup 1/2 cup honey 1/4 cup soy sauce
In a large frying pan, saute garlic and onion in the butter. Add ketchup, honey and soy sauce. Bring to a boil, cover and simmer for 5 minutes.
Add meatballs and simmer uncovered for 5 - 10 minutes as sauce thickens.
