I think a quiche would work well if you're ok with it served not hot. I love quiche, Even @ room temp. If you have a great recipe for a potato or orzo pasta salad maybe? As they do well cold...

Could you do something at home and keep it warm in a crockpot at their house? A lot of crockpot dishes are oven safe so you could cook it in your oven before going over. A hash brown casserole sounds amazing to me.
Chicken salad on croissants. I'd assemble once there & use a cooler to transport chicken salad safely. There are recipes w dried cranberries which are both good and festive!
Oh, another idea would be parfaits. Again, you'd need to assemble once there & transport yogurt in cooler, but you could buy the granola & prep the fruit in advanced

Toast and French Toast are not the same thing. I don't put butter and syrup on my toast but I do on my French Toast. I don't eat both either, if I have French Toast I skip the toast.
What about a savory baked item that doesn't have to be served warm? I'm thinking of something like crescent rolls filled with something like sausage and cheese, or ham and cheese, or spinach and cheese. Basically just make sure it has cheese in it. lol.
ETA: And yes to fruit. The menu sounds like it could use something light. I would cut up each kind of fruit and refrigerate it separately, then drain off any excess juice and mix them in the morning before you leave. That will keep them from getting too mushed together with the others fruits overnight.
