Tonight will be appetizers (fried okra, fried pickles, jalaepeno poppers) for h and I since football. Ds will probably have leftover puzza or cereal.
Tomorrow - spaghetti and cheesy garlic bread.
Tuesday - ds's preschool Christmas show so leftovers after we get home. ETA: Now that I've seen the weather, I think I'll put turkey noodle soup in the crockpot this day.

I think spaghetti and turkey meatballs, that shrimp with sundried tomatoes pasta that someone posted the other day, something with crab, ranch chicken with sweet and spicy sweet potatoes, and probably an order out night and a going out night. And one more thing. Probably more carbs and cheese since tis the season.

tonight - pork roast with garlic, sage, and marjoram herb rub, mashed potatoes, roasted broccoli tomorrow - leftovers from tonight tuesday - H takes the girls to Culver's (weekly tradition) Wednesday and on? No idea.
Swedish meatballs, chicken tikka masala, and slow cooker pot roast. I'm also making veggie soup and carrot soup.
I'm making most of these today as we speak.
Talk to me about doing your prep on the weekend. Do you prefer it? Any tips?
You didn't ask me, but I'll answer anyway. I do all my prep on the weekends because otherwise I can't get myself to cook during the week. The gist of it is that I will do everything I possibly can to make a recipe as simple as possible. Marinating meats, washing and chopping vegetables, making sauces, assembling casseroles, completely preparing soups, etc.
I'm only cooking a few things this week, but I made a veggie soup in the crockpot today. That's totally done. Made sausage and peppers with marinara, just need to cook pasta the day of. Grilled flank steak for tacos and cooked some extra onions and peppers at the same time as the sausage dish to go with.
A couple weeks ago, I made a cream of crap casserole and baked it the day we were eating. I frequently do a protein, starch, veg dinner. I'll put the protein in a marinade and completely prep the veg. All I have to do the day of is grill the protein, toss the veg with oil and seasoning and roast, and put some rice on the stove. If we're having potatoes, I'll pre-bake them and reheat the day of.
Basically, if I think I can get away with doing it early, I do. It takes several hours of intermittent labor, but it works well for me and makes cooking during the week much less stressful and there's minimal clean-up usually too.
DH complained about both meals I prepared this weekend so I told him he can make his own damn meals.
I figure that will last about for or five days and then I'll go back to cooking but it will be a nice break since I don't eat much for dinner and can always find something to eat.
