Hi - I had a holiday party last night and I made a cheese plate, but I refrigerated it right away when it became clear that nobody wanted it.
I'm looking for recipes that incorporate the cheese. I'm not really interested in just eating it as a straight cheese plate, and I made mac and cheese recently so I don't particularly want to make it again.
I also have half a log of the cinnamon cranberry goat cheese from Costco.
Any idea what I can make using these cheeses? No allergies and I'm open to pretty much any kind of cuisine.
I also have chicken breasts, bacon, broccoli, and prosciutto in the fridge right now. I am thinking of using some of the cheese to stuff the chicken and then I'll wrap it in the prosciutto. And of course I can use eggs to make breakfast omelets or quiche.
They would all make great toppings for flatbread, and there are endless possibilities for combining with other toppings. I am not a meat eater, so things like figs, red onions, caramelized onions, arugula, and spinach come to mind.
If you melt the sharp cheddar, Brie, Gruyere, and Gouda into a roux, you have a fantastic cheese sauce for vegetables like the broccoli that you mentioned.
