I think you've got it under control.

It doesn't sound like an emergency situation (she doesn't seem to be in pain and is eating fine). I would definitely get her in on Monday, make sure she doesn't have build up that needs to be scraped or an infection that needs to be treated- but, I suspect she's at a higher risk for losing her remaining teeth "inexplicably" due to the oral surgery in her history. Luckily, even totally toothless cats seem to do just fine!
