We are loving this salmon lately, and it is SO easy. Wrap fool on the cookie sheet to ensure easy clean up. My super picky 4 year old been ate it last night. I serve with veggies of some sort, or salad, and make a little rice for my kiddo.

I served this with quick zoodles. I didn't bother making up bags to freeze, and just dumped the marinade in a ziploc with frozen breasts overnight, and then in the crock pot in the morning.
Another easy salmon dish: Misto or other tiny bit of olive oil spray, S&P, herbs de Provence on one side. Grill ~4 minutes per side. Serve with veg.
Not so homemade: Aidell's chicken meatballs w/edamame pasta (both from Costco)

I really like the skinnytaste.com web site. Tons of different recipes, even has a crockpot section, and I haven't made anything bad from that site yet.

I make a lot of veggie soups. My favorite right now is chicken tortilla (no tortillas harmed in the making of this soup):
- 1 can diced tomatoes with green chiles - 8 oz tomato sauce - 2 cups frozen corn, thawed (you can omit if you're worried about carbs) - 2 cups diced carrot - 1.5 cups diced onion - 28 oz chicken broth (or veggie broth) - 1 tbsp chile powder - 1tsp cumin - 1/4 tsp garlic powder
Dump all in crockpot on low and cook for 6 hours. Then I let cool and blend (you can use an immersion blender if you have one). This step is optional, you can eat it "chunky" if you like chunky soup.
Then I add about 2 cups of shredded chicken breast, but that is also optional.
Serve over sliced avocado, and top with sour cream. You can garnish with corn chips (I make my own by baking corn tortilla wedges).
