DH is vegetarian. My family found this hysterical when we were first dating because my family insists that I don't eat vegetables. As an adult, I regularly eat vegetables. My Mom copes by hitting the Italian deli and picking up a half sheet of Eggplant Parm and serving it with the rest of Easter dinner. This is his favorite dish so it is a win all the way around.
