It's our 10th anniversary in late July. For our HM, we did Disney for a few days before a cruise. If all goes well, I will be 20 weeks pregnant this year on our anniversary.
Our original plan was driving the coast of Oregon, which also included whale watching in what looks like a glorified life raft on rough seas, nice dinners with lots of wine, and romance. If I can't whale watch or drink and (if it's like last time where I had zero interest) if I have no interest in close physical contact, that seems like the wrong trip.
We are now thinking of just three days in WDW (without the kid) staying at a high-end hotel we couldn't afford for a week (Poly or Beach Club), having a few fun meals, and doing one day at Epcot. I know it is hotter than the seventh circle of hell at that time, but Epcot has so many inside things. What do you think? Do this or do something else, like a long weekend in an oceanfront condo?
My criteria are short flight and the ability to relax somewhat, but also to not be bored.
I would go somewhere else, honestly, but you know exactly what you've proposed would be like, so if that sounds fun to you, go for it! If it were just me and my husband in your situation, I would probably stay at a 5* hotel on the beach or elsewhere if I was going to spend $400-500/night on a romantic (maybe, lol, depending how you're feeling) getaway.
If you do go, I highly recommend the restaurants at the Swan and Dolphin. They are a much better value, better atmosphere for this type of vacation than any WDW restaurant IMO. I think Shulas blows Yachtsman away, for example, and Bluezoo is amazing! I am guessing you'd want to be in the Disney Bubble but if you're open to it, check out the Swan an Dolphin. I love that pool area. I haven't gone to Stormalong Bay, just looked at it, but I think the S&D pool is nice for an adults vacation.

Avoid San Diego this July. In addition to Comic Con we also have the MLB All Star game this year. Hotels in downtown will be hard to find and $$$$. If it was any other month I would highly recommend SD but this July is just going to be a mess in downtown.
Disneyland will also be the 7th circle of hell in terms of weather and crowds. We don't have the same level of humidity as WDW but it gets miserable hot and the temp difference between the 2 parks is just a few degrees.
Maybe the Florida gulf coast for a few days on the beach. Sarasota and Longboat Key are nice for a few relaxing days.
Monterey, California- check out the aquarium, 17 mile drive, etc.
