My dad's birthday is today and my mom's is on Wednesday. I always make them a cake. For the past few years I've been rotating between their favorites. This year, I'd like to make a dozen cupcakes in their chosen flavors.
My dad wants carrot cake. Every time I've tried to make them in the past they're oily. Anyone have a good carrot cake cupcake recipe that doesn't grease up the wrappers?
I just made these yesterday--recipe from Cooking Light--not greasy at all.
1 cup flour 1 1/2 tsp cinnamon 1 tsp baking soda 1/2 tsp salt 2 large eggs 3/4 cup canola oil 1 cup sugar 1 tsp vanilla 1 1/2 cups shredded carrots (about 6 medium carrots)
Preheat oven to 350/ Spray 14 paper liners with cooking spray.
Whisk dry ingredients together in a bowl. In a large bowl, beat oil and eggs; gradually add sugar and beat until thick. Add vanilla, then fold in dry ingredients, then fold in carrots.
Fill wrappers and bake for 25-30 minutes. Allow to cool thoroughly before frosting.
