At MK I would definitely FP Mine train and Peter Pan. Probably would try to get Buzz and Pirates as well. Not sure if you will need a FP for Space if you are coming back in the evening.
We had a pre-RD ADR at BOG and we basically walked on under the sea when we were done. From there I think we headed to dumbo and barnstormer with minimal waits.
At AK I would do the safari and ROL. We did not try Kali so not sure if that should be put ahead of the shows but I would lean towards that being the third.

I would definitely do fast passes for: 7 dwarfs Peter Pan (I find it to be just ok, but that wait can be crazy without a FP) Pirates Buzz light year ride Haunted mansion Space Mountain My kids also absolutely loved splash mountain and big thunder mountain, my youngest was just 40 inches also Dumbo has a nice play area to kill time waiting Barnstormer we walked on 3 times in a row Small world we walked on also Under the seas is a constantly moving ride so the wait doesn't get to be too bad If the 5yr old likes characters, in fantasyland by dumbo there is a hidden area at the big top circus where 4 characters, a lot of people don't notice this because it's not in the main area. Check it out!
At Animal Kingdom fast pass Safari Kali river Rapids And either lion king or nemo
Make sure after you use your 3 fast passes for the day you add another, soon you will be able to do this from your phone instead of a kiosk. We ended up getting 6 fast passes in one day last trip and it was awesome!
We go to Disney every year and last month I did all the planning and fast passes for 12 people, if you have any questions ask!

Peter Pan - line is CRAZY and just a basic queue Dumbo (he loves Dumbo) - line is a queue, but has a play place in the middle where one can wait with the kid. Super convenient! Winnie the Pooh - line is super entertaining for kids (at least the 5 kids I was there with). Lots of fun interactives. Monsters Inc - don't FP this. Line is a mass crowd and moves quickly.
At Animal Kingdom we definitely want to do: Safari - 100% FP the night you get availability. This was the best thing at AK. Lion King or Finding Nemo - Nemo had availability for our 11am show, but FP if you have space. TriceraTop Spin - line moved super quick and there was never a huge line the day we were there.
Have you read these touring plans? I LOVE them because it tells you exactly how to tour efficiently and which FP to choose (and which times!), but it isn't rushed. There is also minimal crossing the park.
When we go next we are basically following these over 3 days: MK: Two-Day Morning Plan Day 1 MK: Two-Day Morning Plan Day 2 MK: Two-Day Character-Centric Morning Plan Day 1
AK: TBD
ETA: For AK I am really waiting to see what happens with ROL. I am hoping to get a dining package but will also scoop up a FP if they become available. My main concern is it starting so late when we go our next trip; I may wait until a following trip when the sun sets earlier and hopefully the show starts earlier.

Pete is just a picture on the outside of the tent. Inside is Minnie and Daisy on one side, Goofy and Donald on the other side. Costumes are a bit strange but lines are almost always low. One line for each side.
Oh no! If it helps, I just did mine the last FIVE nights (bc off property) and the only thing I couldn't get was Anna and Elsa (which, if my kids don't know is a thing, they won't know!). Even 30 days out it wasn't an issue to get 7dMT (but a later time than I would have preferred).
