I've not been to Olivia's, but we LOVED Whispering Canyon.
I got the ribs (soooo good), and I sometimes still think about their mashed potatoes.
It was also a really fun atmosphere. Idk if our waitress just wasn't as outgoing because our little card was flipped to say we wanted to play, but she was pretty tame.
Other servers around us were hysterical and we really enjoyed watching the shenanigans go down!

We are pretty critical about barbecue (it's hard to beat Texas barbecue , I am afraid it won't be awesome. Have you eaten at Flame Tree? We are eating there the next day. I am thinking we don't need barbecue 2 days in a row but who knows.

Ahh, I understand your BBQ snobbiness!!
I'm probably not as critical as BBQ, but I *do* love a good rack of ribs and the ones I had were really legit.
DH had a steak that he said was probably one of the best he's had, if that changes your mind?
We haven't been to Flame Tree, so unfortunately no reference there.
I don't know that I'd go to either unless I was staying at that resort. Maybe whispering canyon, it is fun for the kids. Food was good but not amazing. The hotel is gorgeous, though.
Whispering Canyon is fun for kids. I think they have a big menu, you don't have to get the skillet. I'd only go if you have a car, though, or were going on an MK day and taking the boat.

The food was good at Whispering Canyon, but we had the misfortune of sharing the dining room with a couple of busloads of retirees who all turned their cards down. It was not the fun experience we had hoped for.

I like it IF I am at OKW or near OKW. I really like the catfish fritter things and the key lime pie. And a Turtle Crawl. I wouldn't travel to get there unless I had a car.
I haven't been to WCC since I was a teenager so I am not sure about it.
These are two totally different experiences though. Olivia's is a relaxed quiet meal. WCC is fun and lively with " antics"
Olivia's is good, but we eat there only when we stay OKW. Whispering Canyon is fun, we ate Thanksgiving there one year, and it's much quicker to get to from Magic Kingdom. Although if you are Disney Springs you can just take the boat to OKW.
They are so different it's hard to even compare them. I liked Olivia's when we stayed at OKW, but I don't know that I'd do a special trip there for it.
If you really want to do one or the other, since you're from Texas, I say do the Key West themed Olivia's over the BBQ at Whispering Canyon.
