We did it in 2014. DH had to go to Orlando for work, and we decided to do a last minute family trip there for a week. Got work to pay for us to stay at Pop, and I took the kids to the park/swimming during the day and then hung out with DH at night/weekends. We were there for the 24 hour memorial day celebration and it was so much fun to see costumes and such. We left the park before it got super busy, but I'm glad we got to unexpectedly experience it.
We had a lot of fun. Got FP for most rides the boys liked and we had fun swimming.
Yes, I've done tons of planning for DW, but had just as much fun going with the flow that trip.
ETA, Swan/Dolphin have a great location. The theming isn't as much fun, but for a good price and being able to walk/boat to two parks, I'd definitely consider it.
You definitely can! I got a bunch of our ADRs for this week in the past couple weeks using the reservation finder on Touring Plans (small fee to join). BOG, CRT etc, so ones that are hard to find. FPP might be tougher but touring plans can also help with saving on wait times.
