Does anyone have any good apples recipes that don't involve tons of added sugar? My apple tree went nuts this year. It's grafted, so I have gala, fuji, granny smith, and liberty apples. We've been eating them fresh as fast as we can, but that's not putting a big dent in it. I'm thinking some will go to the local food bank. But I'd like to use as many as we can without gorging on apple pie and other desserts.
Yum. Spinach isn't quite in season yet, but it will be soon. It would do with red leaf lettuce too, I bet, which is coming in right now. I actually had a salad almost just like that (spinach + apples) in San Diego a few years ago that was the best salad I've ever eaten. It had a vanilla bean dressing...I think I might need to find a recipe for that dressing!
I make crockpot applesauce. I add in pears so I can cut back the sugar. There isn't any real recipe, just taste as you ass stuff. Cut and peel the apples and pears, chunk them up, and use the low setting for 6-8 hours. Smash it all up when it's soft and add cinnamon, nutmeg, allspice, and ground ginger. You can freeze it too!

I don't have any suggestions for great apple recipes (I *wish* I lived far enough north that we could have super fresh apples!!), but I wanted to throw out there that you could definitely freeze the apples also.
I would slice them up, then wrap them well and put them in the freezer. You couldn't eat them fresh, of course, but you could use them in any recipe where you would be cooking the apples.
Apple butter sounds awesome. I made pumpkin butter last year, and it was amazing! Freezes well, too :-)
